About Dolce Vita

Bringing with him a considerable amount of culinary experience and enthusiasm, Chef Marco Manocchio takes on the role of Chef de Cuisine at Mandarin Oriental, Singapore’s award-winning Italian restaurant, Dolce Vita. During Chef Marco’s career that spans over a decade, he has garnered experience in both local and overseas dining establishments. He started working in Italy, where he was Chef de Partie at Villa Treville, Positano, followed by Sol Melia Hotel, Rome. He subsequently moved on to Marriot Hotels, Pasticceria Dolcemente, and then Intercontinental De la Ville in Rome. A highly motivated individual, Chef Marco then decided to broaden his horizons beyond Italy and took a leap to move to Paris, where he took on the role of Sous Chef at Hotel Lotti. After a three-year stint, Chef Marco’s sense of adventure brought him to Australia where he served as Sous Chef at an Italian restaurant, Fiasco located at Coffs Harbour. Prior to coming on board to Mandarin Oriental, Singapore, Chef Marco was at the famed L’Atelier De Joel Robuchon in Singapore as Junior Sous Chef. He was in charge of coordinating and supervising the team to ensure that kitchen operations ran smoothly.

Enter its doors and be welcomed by a palette of browns and neutral tones that exudes a sophisticated and chic vibe. Its subtle grey floor is given a dose of edginess with two stunning black and white tile showpieces that adorn the spacious main dining area. Over at the bar, a stone finish backdrop and black granite countertop further accentuate its luxe character as diners unwind in comfort on mahogany chairs. The focal point of Dolce Vita is a feature wall with vertical slit windows, offering diners a glimpse into the chefs’ culinary world. Also, the restaurant regales guests with picturesque views of the city’s skyline on the outdoor alfresco area, which leads to the patio and stylish pool area, as ample sunlight streams through the elegant floor-to-ceiling windows.

Befitting of the space, the menu features authentic Italian fare reinterpreted with creativity, passion and finesse. Premium produce are flown in from Italy, and dishes are created with the finest ingredients of the best quality. Guests can look forward to an exquisite dining experience including highlights such as the traditional and flavourful Treccia buffalo mozzarella, homemade pasta and risotto, fresh seafood, and more.
